Larry Maguire
2008 Hall of Fame Inductee
With over 30 years of professional experience in the premium wine industry, Larry Maguire brings a wealth of knowledge and insight to his role as partner and president of Far Niente, and partner in sister wineries Dolce and Nickel & Nickel.
The California native took his first job in the wine industry with Napa Valley’s Franciscan winery in 1975. Maguire began with a short tenure in the winery’s tasting room, then moved into sales and marketing, where he learned the intricacies of the fine wine industry under the tutelage of Justin Meyer, a leader in the rebirth of the Napa Valley wine community. By 1977, after numerous promotions, he took over as Franciscan’s Western Field Manager, with responsibility for Northern California and eight western states, and remained in this position until 1983.
At about the same time that Maguire was honing his skills in sales and marketing management, Gil Nickel was laying the groundwork to turn Far Niente into a world-class Napa Valley wine estate. Maguire joined Nickel and his fledgling winery in 1983, charged with developing the winery’s marketing and sales strategy. In 1991, Maguire was named a partner and appointed managing director Far Niente. In 1997 he became president and CEO of Far Niente. Under Maguire’s leadership, Far Niente has grown from being a small, locally known winery into a critically acclaimed luxury producer. The wines are marketed in the finest wine circles in the United States and several foreign countries. Passionate about wine, he regularly visits the great wine regions of the world, tasting in the cellars and homes of some of Europe’s most famous vintners.
A graduate of St. Mary's College of California with a degree in Economics, Maguire has also completed marketing strategy courses at Stanford Graduate School of Business. He is a former instructor of wine education at Napa Valley College; a past president and current member of the board of directors of the Oakville Winegrower's Association; and a member of the board of directors for the Wine Service Co-op. In 2000, Maguire was elected the Bailli of the inaugural Napa Valley chapter of the Confrérie de la Chaîne des Rôtisseurs.

Micheal Broadbent

Michael Broadbent is one of the most experienced lecturers and writers on wine and has to his credit an unmatched combination of qualifications, international honors and awards.
Born in Yorkshire, England, in 1927 – a very good Port vintage!- he trained as an architect, but at the age of twenty-five changed his career and entered the wine trade first with Layton’s, next with the West End Wine merchants, Saccone and Speed, and, from 1955 with Harvey’s of Bristol. In 1966 he resigned as Sales Director to restart wine auctions at Christie’s which soon dominated this very specialized business. In fact he is perhaps best known, internationally, as a wine auctioneer having pioneered wine auctions in Amsterdam, Geneva, Sydney, Hong Kong, Tokyo, and the United States.
Amongst other positions held, he has been President of The International Wine and Food Society, Chairman of The Institute of Masters of Wine, Master of the Worshipful Company of Distillers and Chairman of The Wine & Spirit Trades’ Benevolent Society. BILL GALLAGHER
HONORARY LIFE-PRESIDENT OF THE WORLD ASSOCIATION OF CHEFS SOCIETIES CHAIRMAN OF THE SOUTH AFRICAN CHEFS ASSOCIATION
Bill Gallagher’s career is too extensive and decorated to describe in great detail. From his early beginnings as apprentice chef at the Royal Country Hotel in Newcastle in England, he was employed as a Commis de cuisine at the Dorchester Hotel in London, before immigrating to South Africa in 1973.
He was immediately employed by the Southern Sun Corporation as Executive Sous Chef at the new five-star Elizabeth Hotel in Port Elizabeth and was promoted to Maitre Chef des Cuisines in April 1975. In 1983, he was promoted to Group Executive Chef of Southern Sun Hotels. From there, it was a short step up to Group Food & Beverage Director in 1985. In March 1988, he was appointed to the Board of Southern Sun Holdings, a position he currently occupies.
Amongst his achievements, Bill lists being elected as President of SACA in 1982; convening the 23rd International Congress of the World Association of Cooks Societies in Johannesburg in 1988; election to the board of directors of the World Association of Cooks Societies as director for Africa in 1988, a position he held for four years; being awarded an honorary Doctor from Johnson & Wales University in the USA in 1992; and convening the World Cooks Tour for Hunger world-wide project in 1993. Gallagher presently holds the position of chairman of SACA and has been elected an Honorary Life-President of the World Association of Chefs Societies. Bill is a proud member of the renowned International Food and Beverage Forum.
Bill has received numerous honorary positions, culinary awards and medals including, amongst many others, a gold medal and silver cup when he represented SA as one of the five chefs in the National Team at the 15th World Culinary Olympics held in Germany in 1987; four gold medals and two bronze medals when he was overall team leader for the SA Chefs City Team at the 17th Culinary Olympics held in Germany in 1988; and in 1990, he was team chef and captain of the SA National Culinary Team which competed at the 6th International Gastroprag Culinary Expo in Czechoslovakia and was awarded three gold medals for cold display exhibits and a second place team silver medal for pastry display. He received the FEDHASA Hospitality Industry Lifetime Achievement Award in 2000 recognizing him as an exceptional leader in the global hospitality industry.
Dr Gallagher’s most recent project has been the conceptualization of the South African Chefs Association’s most exciting project to date – the establishment of a Centre for Culinary Excellence, which will have far-reaching effects for the hospitality industry in South Africa, housing a library, culinary archives, computer center and the establishment of internet-based learning material, which will be accessible across the industry..

Alain Vavro
Of Slovak origin, born in Lyon and an avid Fine Arts enthusiast, Alain Vavro has earned himself a strong reputation with the famous star chefs with whom he works on a regular basis, and above all, Paul Bocuse.
With his wife Dominique, he exercises his designer talents in cooking, wine and arts of the table.
It was their hands that repainted the Bocuse restaurant “versicolore” style and that create plates for the porcelain manufacturers Villeroy & Boch and RAK Porcelain, and sign numerous dishes for famous chefs in France, Italy, London and Chicago.
They design labels for the champagne and wine specialists, including Georges Duboeuf, who, with his Beaujolais Nouveau takes their colors all around the world, as is the case with Lenôtre in Paris who has entrusted them with a “Collector” range of multicolored boxes.
They also invent numerous architectural décors, such as the one at the “Rue Balzac”, Johnny Hallyday’s restaurant in Paris.
Last but not least, after a series of illustrations completed for the publisher Artisan in New York, Alain and Dominique Vavro are in charge of the artistic management of a series of highly aesthetic books dedicated to gourmet cuisine, published by Glénat.

Jesse Sartain
Jesse Sartain is internationally known as America's Palate, having tasted over 150,000 food and beverage products between 1985 and 2001, as Master Taster of the American Tasting Institute.
He is well respected and lauded in the culinary world, earning titles of Maître du Gout, U.S.A.; Maître Canardier de France Honoree; Who's Who, James Beard Foundation; and Les Toques Blanches Honoree.
Jesse Sartain has served as Executive Chef for chains of restaurants in Hawaii and continues to enjoy professional cooking as a culinary educator and guest Chef on various cruiselines, at fundraisers and in media appearances.
He is now Chef du Jury of the American Academy of Taste and National Director of the Chefs In America Awards Foundation.

| André J. Cointreau, who is directly descended from the eminent French Cointreau liqueur and Rémy Martin Cognac dynasties, has become one of the leading ambassadors of French culinary arts throughout the world. Since he assumed the chairmanship of Le Cordon Bleu, Monsieur Cointreau has been credited with pioneering Le Cordon Bleu's recent resurgence as the top-ranking culinary academy in the world, as well as its place as the custodian of French culinary tradition. By expanding Le Cordon Bleu to include more than twenty-two schools, establishing academic alliances and partnerships, and developing an extensive culinary product line, André J. Cointreau has brought a new dynamic style to what was once a classical Parisian cooking school. Having spread Le Cordon Bleu culinary schools in France, the United Kingdom, Japan, North and South America and Australia, André Cointreau has shared the spirit, the passion and the appreciation of the French 'art culinaire' with governments, universities, culinary organizations and the hospitality industry, throughout the world.
Under Mr. Cointreau's direction and vision, Le Cordon Bleu has launched an impressive product line of culinary tools, accessories, cookbooks, tableware, videos, and gourmet food products. He has also successfully licensed Le Cordon Bleu's trademark, which has led to the opening of tearooms, cafés, pastry shops, bakeries and bistros in Korea, Australia, and Japan.
In the spirit of French “art de vivre”, the art of living well, Mr. Cointreau's other business ventures include ownership of Pierre Deux - French Country the exclusive French home furnishing boutique chain in North America. Under the presidency and creative direction of his wife, Madame Hedwige Cointreau de Bouteville, Pierre Deux has expanded to nine select store locations in North America. The chain has also begun opening boutiques in Japan.
Mr. Cointreau holds advanced degrees in management and economics, and also is a member of several international associations, including the Cercle de l'Union Interalliée, the Cercle du Bois de Boulogne, the Aero Club de France, the Chaîne des Rôtisseurs (where he is an elected member of the Conseil Magistral), the Academy Brillat-Savarin, the Lafayette Memorial and is on the Board of Directors of the Alliançe Française Paris. He has received numerous awards and honors, including the Silver Medal of Paris, for his contributions to the French culinary industry.
With vision and influence, Mr. Cointreau travels the world sharing his philosophy of “l'art culinaire,” while underscoring the relevance of French technique to contemporary and classical cuisines of the world. Under his guidance and dynamic leadership, Le Cordon Bleu today is the bastion of the culinary arts and “l'art de vivre,” a centuries-old tradition in France.

Born in Santiago, Chile, Agustin began his career there and is one of the few vintners who has dedicated his entire professional life to the wine industry. He entered the wine business in 1960 as Chief Executive Officer of Concha y Toro. Then a small winery, Concha y Toro grew to become Chile's largest winery under Agustin’s leadership. In 1971, Chile’s difficult political climate led Agustin to leave his home country. He subsequently headed Seagram’s worldwide operations, responsible for wineries in seven countries, as well as California. In 1989, Agustin Huneeus and his wife Valeria purchased the 280-acre property in Rutherford that would become Quintessa. In the intervening years, they have worked to reflect the character of this unique property in the wine made here. “We base our future on the fact that wine should be – and will be – known for the property from which it originates, rather than its varietal composition” Today, he devotes his time to realizing his dream of developing Quintessa into a world-class wine estate. He also maintains vineyard holdings in Chile, Alexander Valley and Napa Valley. Agustin was awarded the Distinguished Service Award by the Wine Spectator in 1996.

| | Horst Schulze served as the vice chairman of the Ritz-Carlton Hotel Company from 2001 to 2002. Previously he served as president and chief operating officer of Ritz-Carlton, a position he held since 1988. Under his leadership, the Group was awarded the 1992 and 1999 Malcolm Baldrige National Quality Award and has been continuously voted “best hotel company in the world” by convention and trade publications. In November of 1991, Mr. Schulze was recognized as "corporate hotelier of the world" by HOTELS Magazine. In 1995 he was also awarded the prestigious Ishikawa Medal for his personal contributions to the quality movement. Mr. Schulze is a recognized leader in the service world. His vision has indeed helped reshape customer service concepts in both the hospitality and the service industries.

Jiggs Kalra, a journalist by trade and a gastrosophe by passion, has influenced Indian Cuisine in a way similar to Brillant-Savarin the French Cuisine. Not always without controversy, but always breaking boundaries, Jiggs was able to bring about an impact in his culture through continuous research. He unearthed 1000-year-old recipes and brought them back to the table. Through his active promotion of Indian Cuisine around the world, he continues to be the inspiration of the present-day generation.

MAX SCHUBERT -- WINEMAKER 2004 Inductee |
As the creator of Penfolds Grange Hermitage, Max Schubert was arguably the most important and influential figure in the modern Australian Wine Industry. Almost single-handedly Schubert lifted Australia’s table wine industry out of mediocrity in the 1950s. Appointed Penfolds Chief Winemaker in 1948 he was sent to study sherry-making in Spain. On his way back he visited Bordeaux and was introduced to mature claret. Schubert returned from France inspired with the determination to produce an Australian red wine comparable with those produced in Bordeaux. He developed Grange Hermitage beginning with the 1951 vintage using Shiraz grapes rather than Cabernet Sauvignon, because Shiraz was the only quality red wine variety available at the time. Schubert ‘retired’ in 1975 but stayed on as a consultant with an office at Penfolds’ original winery at Magill near his home until shortly before his death in 1994.
Jean-Marie Lacroix 2003 Inductee
Executive Chef, Lacroix at The Rittenhouse, Philadelphia, Pennsylvania, U.S.A. Internationally renowned Chef Jean-Marie Lacroix joined The Rittenhouse Hotel in Philadelphia as Executive Chef in fall 2001. One year later, he realized his vision of designing and opening his own restaurant, Lacroix at The Rittenhouse. As Executive Chef, Lacroix oversees the kitchen serving the hotel and restaurant, including banquet and room service functions. Lacroix is known for his signature style, which makes use of the freshest local ingredients. "Taste is everything," Chef Lacroix is known to say. However, his influence extends beyond the kitchen. He is especially recognized for his encouragement and development of young talent. Indeed, many of the kitchens in Philadelphia's top restaurants boast of having a Lacroix "graduate." His commitment to cultivating tomorrow's chefs is evidenced by his position as Master Culinaire in Residence at the Restaurant School at Walnut Hill College, and on the board of the Culinary Arts Program of the Philadelphia Art Alliance. Lacroix is a native of Epinal in France's Franche-Comte region. He received his formal training at Thonon les Baines on Lake Geneva. He has cooked at restaurants and hotels in France, Switzerland, England, Scotland and Canada. Lacroix is a member of the prestigious Maîtres Cuisiniers de France. In 1998, he became the first Philadelphian to receive the Robert Mondavi Award for Culinary Excellence, and in 2001, he received the James Beard Award for Best Chef, Mid-Atlantic United States. Chef Lacroix is currently featured in a PBS series entitled Americas Best Chefs, which profiles the James Beard Award-winning chefs of 2001.

Founding Editors/Publishers, Food Arts Magazine, New York City, New York, U.S.A. Michael and Ariane Batterberry have founded two of the most influential national food magazines in this and the past century: Food Arts and Food & Wine. Today Food Arts is recognized internationally as the publication of record for the entire table service restaurant and hotel industry, while Food & Wine is positioned as one of the country's leading consumer magazines. As a result of their roles as founding editors/publishers of Food Arts magazine, the Batterberrys command a unique pivotal position in the international spheres of food and drink as experts and as the ultimate trend spotters. Together or individually, they have authored 18 books on food, entertaining, and art and social history. For two decades, the Batterberrys have appeared on national and local radio and television to discuss food and drink in their many contexts. As frequent lecturers, they have traveled the country speaking to many prestigious institutions and groups, including the Smithsonian Institution, New York University, Young Presidents' Organization, the International Association of Culinary Professionals, The International Hotel/Motel & Restaurant Show, Distinguished Restaurants of North America, and other top trade organizations.
